The site was in a department store with restrictions on noise and access. All components including stainless steel conveyor belt and panels and solid oak chairs, tables and partitions were built in a factory over a period of four weeks and assembled on site in 8 hours. Work started at midnight and the restaurant was fully operational serving lunch in the morning.
